Samosa Masala Chutney
A combination of the onion-tomato masala and the samosa recipes from @dishoom’s cook book and the Masala Dabba - a STUNNING spice set. You can get both on Dishoom’s site and these alone would make a brilliant gift. If you order by tomorrow (18th) you can get them in time for Christmas.

Recipe:
- 300ml veg oil
- 1.2kg white onions. Finely chopped
- 35g garlic paste
- 30g ginger paste
- 1 3/4 tsp Deggi mirch chilli powder
- 1/2 tsp cumin seeds, ground cumin, tumeric, ground black pepper, amchur & garam masala
- 10g sliced green chilli
- 1 tsp ground cinnamon
- 600g chopped tomatoes
- 10g salt
- 45g brown sugar
- cook the onions in the oil until soft and brown (low and slow. Around 1 hour)
- add in the garlic, ginger and green chillis and cook for 2 mins then add the dry spices and cook for another 2 mins
- add the chopped tomatoes, salt and sugar and simmer for 30mins
- season and sugar to taste if needed, jar up and keep refrigerated
