Chef Joel Javier of @flipeats - invited me over last spring to cook something meaningful and delicious. 

I find myself connecting instantly with chefs. I believe it’s in our mutual nature to want to connect with others and to give. For Joel it lives in a space where nourishing others through the food he cooks show’s his love. It’s also a passion to teach, to reach out to those he encounters and leaves them with something more to take home than a full belly. It’s his commanding presence, his ability to imagine and an ever growing ability to spread kindness. 

 Joel’s story started when he was young, after loosing his father, his Mother depended on him to help out in the kitchen cooking for the family. His roles in the kitchen started off simple but eventually graduated the more his interest in cooking grew. When the decision to go to culinary school came it seemed to Joel as a natural progression. 

Durning school Joel would study all day and work in a kitchen all night. Leaving his school work to suffer but also getting real world experience that would push his knowledge more into the path that he would eventually travel. He loved the chaos of the kitchen, the camaraderie he felt and also after reading Kitchen Confidential knew he was where he wanted to be. 

Growing up in the states his family didn’t eat a lot of Filipino food, they didn’t want to stick out. So after years of school and working through the tradition chef experience Joel decided to do a traditional Filipino pop and quickly learned from others that his food wasn’t Filipino enough. Which made Joel and Rachel together go back to the Philippines and go relearn his own cultures cooking. Through that experience FlipEats was born.

Now Joel together with his wife Rachel, and their dog Whiskey, run the incredibly successful private catering company @flipeats, with their own amazing chili oil brand @liquidgoldgarlic

Fall just might be my favorite time of year. Pulling that beloved sweater or hoodie from the closet gives me such joy. 

Here is to all the clothing I can’t wait to wear again without the fear of over heating.

In honor of back to school, I would like to give a special shout out to all those amazing Teachers out there. You truly do the hard work. So let’s all say a big THANK YOU to all the teachers we know and love! Also don’t worry Teachers, I left a little something for you all on the last slide. Enjoy!!

Personal note: Today we picked up our marriage license, only six and a half weeks to go and can’t believe how time has flown. It wasn’t that long ago we got engage in Marrakech on a sunrise hot air ballon ride over the Atlas Mountains. I was so nervous then, worried about dropping the ring, but since then I haven’t felt nervous once about our life together. I am so excited about this next phase of our journey together and that we get to celebrate with our families and friends.

Michael Boggia - ‘Nonna’s Lasagna with a side salad of greens and homemade fermented veggies’ 

On a lovely afternoon, I got to watch Michael make his Nonna’s Lasagna and chat about all things Italian Grandma’s and Fermented Foods.  Michael is the first amateur chef in my on going chef series. His day job is VP of sales for LoopUp, a company based in London. He currently resides in Brooklyn with his wife Rachel and their two cats. Michael’s connection to cooking all stems from his relationship with his Italian grandmother Nonna Ines. 

Like most nonnas, Nonna Ines always had her grandchildren helping out in the kitchen when she was cooking Sunday dinners or during the summer in their family vacation home in Borgotaro, Italy. Michael vividly remembers staying super close to Nonna Ines as she cooked, sort of her right hand man, and absorbed everything she was doing.

Michael has also participated in Ultra marathons and through his co-founded organization Diversum @diversum_project, he helped raise $6000 for NubAbility Athletics @nubabilityathletics which is an organization that was started to encourage, inspire and instruct limb different youth by getting them out of the stands and into mainstream sports. This is something close to Michael’s own story since he was born with Symbrachydactyly of his left hand; something that never stopped him from being able to cook amazing meals and one day would love to do is educate children about disabilities through cooking - showing everyone what’s achievable regardless of limitations. 

I’ll end this post with inspiring words from Michael himself: 

“I think that it’s important for disabled people, particularly disabled kids, to know that the ability to perform to the same standards, if not higher standards, than ‘normal’ people is absolutely possible. Our disabilities can either be seen as limitations, or as opportunities to get creative and learn to solve problems, which in turn can unlock capabilities most people would envy. This applies to cooking, where we need to figure out how to adapt regular equipment to suit our needs, and to life.”

To date this is one my favorite pieces I photographed for @lawtonmull, the Grandpa Beaver armchair designed by Frank Gehry in 1987, not only gives my young boy’s imaginative dreams a run for its money but the durability and stable structure of this piece also impresses my adult nature for it’s craftsmanship. 

Though this piece is designated as a work of art I love how the original owner used it in their office as actual office furniture. You can see the durability of this piece through the worn edges and the compression on the seat and armrest. Living furniture.
