5 Ingredient ULTIMATE Cauliflower Cheese 

Do you want to level up your cauliflower cheese game this Christmas? @rorychefbaynes has you covered, championing ✨Essential Cauliflower✨ and topping with a whole No.1 Badoz Vacherin Du Haut-Doubs.  Decadent and easy in equal measures, this one is for the cheese lovers and can even roast alongside your potatoes. 

Serves 8:
1 small Essential cauliflower
2 tbsp Cooks’ Ingredients Black Garlic Paste 
50g unsalted butter, cubed
Salt & pepper, to taste
1 No.1 Badoz Vacherin Du Haut-Doubs (camembert, epoisses or brie would be good alternatives)
2 tbsp Cooks’ Ingredients Crispy Fried Onions 

🔥 Preheat the oven to 200c.
 🧈 Smear the cauliflower with the black garlic paste, dot with cubed butter, season with salt & pepper and wrap well in tin foil to encase the steam.
🔪 Place onto a lipped tray and bake for 40 minutes until just softened when skewered with a sharp knife.
🧀 Remove from the oven, place the cauli onto the tray, baste with the cooking juices and discard the foil. Unwrap the cheese and place on top of the roast cauli, drive a skewer down through both to hold them together. Place back in the oven for 10-15 minutes.
🤤 When ready to serve, place the whole cauli onto a serving tray, whisk up the juices to emulsify and pour around, sprinkle with crispy onions and carve at the table.

Roast potatoes are such a big part of the perfect roast dinner on Christmas day so i want to show you how i would achieve mine. There are w few key things here. Choosing the right potatoes, using a mixture or fats and temperature!

Add the garlic cloves half way through so they dont burn and finnish with the rosemarry & thyme salt!

PSA: STOP BOILING OR STEAMING YOUR BRUSSELS! 🌰 🥬 
...Fry them in a wok or hot pan instead with loads of garlic and chestnuts. You can steam them with whatever stock you have on hand, or even booze, and add in some sausage or pancetta if you like.

Serves 4 as a side 

Ingredients:
500g pack of brussel sprouts, trimmed, halved and washed 
5-8 cloves of garlic, crushed 
180g pack of cooked chestnuts 
250ml of unseasoned stock, or booze, or gravy (if your stock is seasoned, use less salt)
1 tsp salt 
½ tsp of sugar or maple syrup or honey, and more to taste if still bitter

Method:
🥬  Pre-heat a wok or heavy bottomed frying pan until smoking. 
🥬  Coat the pan or wok in any neutral oil (vegetable or sunflower), and add in the sprouts, season with salt and do not touch for around 2 minutes, or until the sprouts take on some colour. After you can see some char on the sprouts, add in a little more oil, then the crushed garlic and toss vigorously to prevent the garlic from burning for 30 seconds. 
🥬  Add in the stock, sugar and chestnuts, and once the stock is boiling (this should happen very quickly), cover with lid. Turn down the heat to medium and cook for around 3 minutes, until the sprouts have softened but retain their bite. 
🥬  After 3 minutes, remove the lid and cook for 1-2 more minutes with the lid off to evaporate some of the liquid. Check for seasoning and add a little more salt or sugar to taste, it should be well balanced with richness from the chestnuts and the sprouts should be green and cooked through.

Paired with layers of mascarpone cream, toasted hazelnuts, TWO liquors, along with cinnamon and cocoa dust, it’s a real showstopper! 🤩

- 150ml double cream
- 250g mascarpone
- 4 tbsp Disaronno Velvet or Baileys
- 1 tsp vanilla bean paste

- 4 tbsp Mr Black Cold Brew Coffee Liqueur or Kahlúa (optional)
